Join us for this two-day Master Class discovering the fine art of French tart making.

The class will be a hands-on exploration of both classic and contemporary French pastry fundamentals, from first mix to final decoration.

We will learn essential pastry skills including dough handling, tart shell preparation, frangipane, lemon curd, ganache montée, Italian meringue, and professional assembly techniques

The two elegant classics we will be exploring are:

Lemon Tart with Italian Meringue — crisp pâte sucrée, silky lemon curd, and refined finishing techniques.

Wild Berry Frangipane Tart with White Chocolate Ganache Montée — almond frangipane, vibrant berry confit, and a light whipped ganache.

Participants will also leave with beautiful pastries, tart ring and tartlet pan, as well as techniques to continue using confidently at home.

A brief intro about our instructor:

Molly Lou Freeman, grew up in a Homer fishing family and began working seasonally at Two Sisters Bakery as a teen before moving on to cooking at different Alaskan lodges. Molly then went on to become an international schoolteacher before setting her sights on artisanal French baking.  Molly is a French nationally certified artisan baker who trained at Ferrandi Paris and now works as a culinary translator, supporting pastry chefs at Le Cordon Bleu Institute in Paris. Molly also runs a small organic artisan pastry business in her French village. She is passionate about celebrating the traditions, techniques, and stories that connect people through beautiful, delicious food.
